Ingredients:
Top layer: 115g chocolate
14g of butter
Middle layer: 55g of butter
2 tablespoons of custard powder
2 cups of icing sugar
½ tablespoons of vanilla essence
2-3 tbsp of milk
Bottom layer: ½ cup of butter
¼ cup of sugar
⅓ cup of cocoa powder
1 egg
1 teaspoon of vanilla essence
200g graham crackers
1 cup of shredded coconut
½ cup of chunk chocolate
How to make it:
Bottom layer (the base)
- First turn your saucepan on to medium/ low heat,
- start melting ½ cup of butter until melted then take it off the heat,
- add in ¼ of sugar, ⅓ cup of cocoa powder and mix them in
- and then add in 1 egg whisk the egg in and pop it back onto the heat and continue
- stirring until the mixture is extracted. Once it is removed from the heat add
- in 1 teaspoon of vanilla essence and 200g of graham crackers crumbs and mix them in,
- then add in 1 cup of shredded coconut and ½ cup of chunk chocolate and mix.
- Pop the mixture onto the baking tin that has been pre lined and press firmly on the bottom,
- once it is flatted put it in the fridge to set for 1 hour.
Middle layer
- You will need 55g of butter at room temperature and beat until smooth,
- then mix in 2 tablespoons of custard powder, 2 cups of icing sugar, ½ cup of vanilla essence,
- 2-3 tablespoon of milk and mix in the beater until smooth and then put the mixture on top of the bottom
- layer and spread over the tray and in the fridge for 30mins.
Top layer
- Put water in the saucepan and let it simmer and put a bowl on top of the water
- and add in 115g of chocolate, 14g of butter and slowly melt while simmering underneath,
- then scoop the chocolate mixture on top of the middle layer and spread across the tray
- and put in the fridge for 15mins.
Cut and enjoy with the family
